Prosperity Mandarin Orange Buttercup Cake

Ingredients


  • 200g

    Buttercup Luxury Spread

  • 100g

    caster sugar

  • 4

    large eggs

  • 200g

    plain flour

  • 1 tsp

    baking powder

  • ½ tsp

    salt

  • Juice of 1 mandarin orange

  • Flesh of 1 mandarin orange

  • Optional topping: Peanut crunch

Directions


  1. Preheat the oven to 170°C.
  2. Cream the Buttercup Luxury Spread and sugar until light and fluffy.
  3. Add the eggs one at a time, mixing well after each addition.
  4. Sift together the flour, baking powder, and salt, then fold into the batter.
  5. Stir in the mandarin orange juice and flesh.
  6. Pour the mixture into a prepared tin. If desired, arrange a few slices of mandarin orange and sprinkle peanut crunch on top before baking for added texture and flavour.
  7. Bake for 60 minutes.
  8. Cool before serving.
