Directions
- Preheat the oven to 170°C.
- Cream the Buttercup Luxury Spread and sugar until light and fluffy.
- Add the eggs one at a time, mixing well after each addition.
- Sift together the flour, baking powder, and salt, then fold into the batter.
- Stir in the mandarin orange juice and flesh.
- Pour the mixture into a prepared tin. If desired, arrange a few slices of mandarin orange and sprinkle peanut crunch on top before baking for added texture and flavour.
- Bake for 60 minutes.
- Cool before serving.
