Christmas Baked Apples

Ingredients


  • 30g

    Buttercup Luxury Spread

  • 4

    large baking apples

  • 50g

    brown sugar

  • 1 tsp

    cinnamon

  • 40g

    currants or chopped raisins

  • 30g

    oats

  • 180ml

    boiling water

  • ½ tsp

    nutmeg (for that warm holiday flavour)

  • ½ tsp

    ginger (optional for extra spice)

  • 30g

    chopped walnuts (optional)

  • Maple syrup, for drizzling

  • Fresh cranberries or pomegranate seeds for garnish

Directions


  1. Preheat oven: Set to 190°C. Prepare apples: Rinse and dry the apples. Use a paring knife or apple corer to remove the cores, leaving about 1/2 inch intact at the bottom.
  2. Make the oat stuffing: In a bowl, mix together brown sugar, cinnamon, nutmeg, ginger, currants or raisins, chopped walnuts, and oats.
  3. Stuff the apples: Place the apples in a baking dish. Fill each apple with the oat mixture. Dot the top with more Buttercup Luxury Spread for a richer flavour.
  4. Bake: Pour the boiling water into the baking dish around the apples. Bake for 30-45 minutes, until the apples are tender but not mushy. Baste with the juices from the dish halfway through.
  5. Drizzle with maple syrup: Once the apples are out of the oven, finish by drizzling maple syrup over the top.
  6. Garnish: Top with fresh cranberries or pomegranate seeds
