Crème Brûlée

A modern spin on a well-loved staple. This creamy dessert brings together the natural sweetness of sweet potato with the signature crackle of caramelised sugar.

Ingredients


  • 30g

    Buttercup Luxury Spread

  • 2

    sweet potatoes

  • 160g

    heavy cream

  • 6 tbsp

    sugar

  • 100g

    fresh milk

  • 2

    egg yolks

  • 2 tsp

    cornstarch

Directions


  1. Preheat oven to 200. Roast sweet potatoes for 25-30 mintues until soft.
  2. In a small pot, heat heavy cream and 2 tablespoons of sugar until simmering.
  3. Whisk egg yolks with remaining sugar and cornstarch in a bowl. Gradually add a splash of hot cream to egg mixture.
  4. Return mixture to pot. Simmer, stirring constantly, until thick and smooth.
  5. Remove from heat and mix in Buttercup Luxury Spread. Let cool.
  6. Carve a small boat-shaped cavity into each roasted sweet potato. FIll sweet potato boats with cooled custard mixture.
  7. Torch the sugar until it caramelises into a hard surface.
