Ingredients

Buttercup Luxury Spread

sweet potatoes

heavy cream

6 tbsp
sugar

fresh milk

egg yolks

2 tsp
cornstarch
Directions
- Preheat oven to 200. Roast sweet potatoes for 25-30 mintues until soft.
- In a small pot, heat heavy cream and 2 tablespoons of sugar until simmering.
- Whisk egg yolks with remaining sugar and cornstarch in a bowl. Gradually add a splash of hot cream to egg mixture.
- Return mixture to pot. Simmer, stirring constantly, until thick and smooth.
- Remove from heat and mix in Buttercup Luxury Spread. Let cool.
- Carve a small boat-shaped cavity into each roasted sweet potato. FIll sweet potato boats with cooled custard mixture.
- Torch the sugar until it caramelises into a hard surface.
