Gula Melaka Banana Cake with Walnuts

Ingredients


  • 250g

    Buttercup Luxury Spread, softened

  • 140g

    gula melaka, shaved

  • ½ tsp

    vanilla extract

  • 4

    large eggs

  • 270g

    self-raising flour

  • ¼ tsp

    baking soda

  • ½ tsp

    salt

  • 240g

    mashed ripe bananas

  • 60g

    chopped walnuts

  • 30g

    shaved gula melaka, for topping (optional)

  • Extra walnuts and banana slices, for decoration (optional)

Directions


  1. Preheat oven to 170°C.
  2. Grease and line a 7-inch square cake pan with baking paper.
  3. In a large bowl, cream together the Buttercup Luxury Spread and shaved gula melaka until light and fluffy.
  4. Add vanilla extract and mix well.
  5. Beat in the eggs one at a time until fully incorporated.
  6. Stir in the sifted self-raising flour, baking soda, and salt until just combined.
  7. Fold in the mashed bananas and chopped walnuts.
  8. Pour the batter into the prepared cake pan.
  9. Optionally, top with banana slices, walnuts, and shaved gula melaka.
  10. Bake for 50–55 minutes or until a skewer inserted into the center comes out clean.
  11. Let the cake cool completely in the pan before removing and slicing.
