Holiday Crab Feast with a Creamy Fiery Garlic Sauce

Ingredients


  • 150g

    Buttercup Luxury Spread

  • 1 kg

    crab, cleaned

  • 4

    bay leaves

  • 7

    cloves garlic, finely chopped

  • 2 tbsp

    paprika

  • 1 tbsp

    cayenne O 1/2 tbsp red chilli flakes

  • ½ tbsp

    coriander powder

  • 1 tsp

    cinnamon

  • 2 tbsp

    vinegar

  • ½ cup

    coriander leaves, finely chopped (plus extra for garnish)

  • 1 tsp

    pepper powder Salt to taste

    limes, cut into wedges

  • 2

    ears of fresh corn, cut into quarters

Directions


  1. Prepare the Crab: Rinse the cleaned crab in cold water. Boil a pot of water, add the crab, 1 lime, and 2 bay leaves. Cook until the crab turns pink, then drain and set aside.
  2. Cook the Corn: In the same pot of boiling water (after removing the crab), add the corn quarters and cook for about 5-7 minutes until tender. Drain and set aside.
  3. Make the Sauce: Melt the Buttercup Luxury Spread in a large, heavy-bottomed pot over medium-low heat. Add bay leaves and garlic, cooking until fragrant.
  4. Stir in paprika, cayenne, chilli flakes, coriander, and cinnamon, cooking briefly to enhance the flavours. Add vinegar, pepper, and salt to taste.
  5. Combine Crab, Corn, and Sauce: Add the drained crab, cooked corn, and optional sausage chunks to a large bowl and pour the Buttercup sauce over everything, tossing well to coat.
  6. Optional: Return everything to the pot, cover, and cook on low heat for an additional 10 minutes, stirring every 5 minutes.
  7. Serve: Transfer to a serving plate, finish with a sprinkle of fresh coriander, and garnish with lime wedges. Serve with extra sauce on the side.
