Ingredients

  • 100g

Buttercup Luxury Spread (cubed and chilled)

  • 180g

    plain flour

  • 2 tbsp

    icing sugar

  • 1

    egg yolk

  • 200g

    Nutella

Directions

  1. Preheat the oven to 180°C. Line a baking tray with baking parchment.
  2. In a mixing bowl, stir together the flour and icing sugar.
  3. Add the Buttercup Luxury Spread and cut it into the flour mixture until it resembles coarse crumbs.
  4. Stir in the egg yolk until the dough comes together.
  5. Shape the dough into a disc, wrap it in cling film, and chill in the freezer for 30 minutes.
  6. Remove the dough from the freezer and cut it into 18-20 pieces. Roll each piece into a ball.
  7. Dust a pineapple tart mold with flour, then press the dough into the mold.
  8. Carefully remove the dough from the mold and place it neatly onto the tray.
  9. Bake the cookies for 10-12 minutes, or until they are golden brown.
  10. While the cookies are baking, place the Nutella in a piping bag fitted with a star nozzle.
  11. Once the cookies are baked, remove them from the oven and let them cool slightly on the baking tray.
  12. Pipe the Nutella onto the centre of each cookie in a spiral pattern.
  13. Return the cookies to the oven and bake for a further 5-7 minutes, or until the Nutella is melted and gooey.
  14. Let the cookies cool completely on the baking tray before transferring them to an airtight container.
