
Ayam Buttermilk Raya
Golden fried chicken pieces coated in a luscious, buttery buttermilk sauce infused with curry leaves, chilli, and garlic. This comforting dish brings warmth and indulgence, perfect for sharing with loved ones.
Ingredients
For the Chicken:

chicken, cut into bite-sized pieces

3 – 4 tsp
salt

1 tsp
turmeric powder (for colour and extra flavour)

egg

1
small pack of fried chicken coating mix
For the Buttermilk Sauce:

4 tbsp
Buttercup Luxury Spread

yellow onion, sliced

3 – 5
red or green chillies, sliced

sprig of curry leaves

cans evaporated milk

½ tbsp
brown sugar
Directions
Prepare the chicken:
- Season the chicken with salt and turmeric powder.
- Add the egg and mix well to coat.
- Coat the chicken evenly with the fried chicken powder.
Fry the chicken:
- Heat oil in a deep pan over medium-high heat.
- Fry the chicken until golden brown and crispy.
- Drain on kitchen paper and set aside.
Make the buttermilk sauce:
- In a separate pan, melt the Buttercup Luxury Spread over medium heat.
- Sauté the onion, chillies, and curry leaves until fragrant.
- Pour in the evaporated milk, add the brown sugar, and stir well.
Combine and serve:
- Add the fried chicken to the sauce and toss to coat evenly.
- Simmer for 1 minute until the sauce thickens slightly.
- Serve hot with steamed white rice.
