Ayam Buttermilk Raya

Golden fried chicken pieces coated in a luscious, buttery buttermilk sauce infused with curry leaves, chilli, and garlic. This comforting dish brings warmth and indulgence, perfect for sharing with loved ones.

Ingredients


For the Chicken:

  • 500g

    chicken, cut into bite-sized pieces

  • 3 – 4 tsp

    salt

  • 1 tsp

    turmeric powder (for colour and extra flavour)

  • 1

    egg

  • 1

    small pack of fried chicken coating mix

For the Buttermilk Sauce:

  • 4 tbsp

    Buttercup Luxury Spread

  • 1

    yellow onion, sliced

  • 3 – 5

    red or green chillies, sliced

  • 1

    sprig of curry leaves

  • 4

    cans evaporated milk

  • ½ tbsp

    brown sugar

Directions


Prepare the chicken:

  1. Season the chicken with salt and turmeric powder.
  2. Add the egg and mix well to coat.
  3. Coat the chicken evenly with the fried chicken powder.

Fry the chicken:

  1. Heat oil in a deep pan over medium-high heat.
  2. Fry the chicken until golden brown and crispy.
  3. Drain on kitchen paper and set aside.

Make the buttermilk sauce:

  1. In a separate pan, melt the Buttercup Luxury Spread over medium heat.
  2. Sauté the onion, chillies, and curry leaves until fragrant.
  3. Pour in the evaporated milk, add the brown sugar, and stir well.

Combine and serve:

  1. Add the fried chicken to the sauce and toss to coat evenly.
  2. Simmer for 1 minute until the sauce thickens slightly.
  3. Serve hot with steamed white rice.
