Simple Basmati Rice Paella with Seafood

Ingredients


  • 25g

    Buttercup Luxury Spread

  • 270g

    basmati rice

  • 250g

    boneless, skinless chicken thighs, cut into bite-sized pieces

  • 350g

    large shrimps, deveined

  • 450g

    blue mussels, rinsed and debearded

  • 250g

    squid, cleaned and cut into rings

  • 1

    red bell pepper, chopped

  • 1

    yellow bell pepper, chopped

  • 450g

    canned diced tomatoes

  • 950g

    chicken broth

  • 1 tbsp

    paprika

  • 0.6g

    saffron threads

Directions


  1. Heat Buttercup Luxury Spread in a deep skillet over medium-high heat. Add the chicken thighs and brown them on both sides. Remove and set aside.
  2. Reduce the heat to medium. Add the chopped red and yellow bell peppers. Cook until softened, about 5 minutes.
  3. Stir in the chicken broth, canned diced tomatoes, paprika, and saffron. Bring to a boil.
  4. Add the basmati rice and the browned chicken pieces (along with any pan juices) back into the skillet. Reduce the heat to low and simmer uncovered for about 20 minutes or until the rice is tender.
  5. Stir in the shrimp rings, squid rings, and blue mussels. Cover and cook for an additional 15 minutes or until the rice is fully cooked and the mussels have opened.
  6. Once the rice is cooked and the seafood is done, remove from heat. Let it sit for a few minutes before serving.
