White Chocolate Matcha Brownies

Ingredients


Ingredients for the mixture:

  • 70g

    Buttercup Luxury Spread Salted, softened

  • 100g

    white chocolate

  • 2

    eggs

  • 60g

    sugar

  • 1 tbsp

    matcha powder

  • 150g

    cake flour

  • 1½ tsp

    baking powder

  • 3 tbsp

    white chocolate chips

Materials for decoration:

  • 3 tbsp

    melted white chocolate

  • ½ tsp

    matcha powder

Directions


  1. Preheat the oven to 170°C. Line a 15 × 15 cm (6 × 6 in) square tin with baking parchment.
  2. Melt Buttercup Luxury Spread salted and chocolate: in a heatproof bowl set over a pan of simmering water, melt the white chocolate and butter together, stirring gently until smooth. Remove from the heat and leave to cool slightly.
  3. Whisk the eggs and sugar: in a mixing bowl, whisk together the eggs and sugar until just combined.
  4. Add the matcha: sift in the matcha powder and whisk until the mixture is smooth and evenly coloured.
  5. Combine: pour the melted chocolate mixture into the egg mixture and stir until well blended.
  6. Add the dry ingredients: sift in the cake flour and baking powder, then fold gently until just combined. Stir in the white chocolate chips.
  7. Bake: pour the batter into the prepared tin, smooth the surface, and bake for 20–25 minutes, or until the centre is just set and a skewer inserted comes out with a few moist crumbs.
  8. Leave to cool completely in the tin before removing.
  9. Finish: drizzle or spread the melted white chocolate over the top and dust with matcha powder before serving.
