Pandan Kaya Thumbprint Biscuits

Ingredients


  • 300g

    plain flour

  • 227g

    Buttercup Luxury Spread, softened

  • 1

    large egg

  • ½ tsp

    baking powder

  • ½ tsp

    salt

  • 120g

    caster sugar

  • 2 tsp

    vanilla extract

  • Pandan kaya

Directions


  1. Preheat the oven to 180°C and line a baking tray with baking parchment.
  2. In a bowl, whisk together the plain flour, baking powder, and salt.
  3. In a separate bowl, cream the Buttercup Luxury Spread and caster sugar until light and fluffy.
  4. Beat in the egg and vanilla extract until well combined.
  5. Gradually add the dry ingredients to the wet mixture, mixing until a soft dough forms.
  6. Roll the dough into small balls and place them on the prepared baking tray.
  7. Press the centre of each ball gently with your thumb to create an indent.
  8. Fill each indent with pandan kaya.
  9. Bake for 12–15 minutes, or until lightly golden.
  10. Transfer to a wire rack to cool before serving
